  • For 4 people :
  • 4 sweet veal
  • 4 thin slices of bacon
  • 4 leaves of sage
  • 20 cl of dry white wine
  • 2 tbsp. grated Parmesan cheese
  • 2 tbsp. tablespoon of olive oil
  • 1 knob of butter
  • salt
  • pepper


Overlay each cute 1 slice of bacon and 1 leaf of sage. Hold them with a wooden spike. Steam them with butter and oil, 5 min meat side, 1 min sage side. Take them out of the pan. Deglaze this with the wine. Add parmesan, salt, pepper, mix and pour over saltimboccas.
